Volume, quality, queue
Four hundred drinks a day across two machines. Six single origin coffees dialled in a month with extraction logs kept for each. Queue time at peak from seven minutes to four after the order flow changed. Those three cover pace, craft and the thing customers actually notice.
Extraction logs are the detail that separates a speciality barista from a fast one. Keeping a record means the quality is repeatable by somebody else, which is what a shop owner needs on a day when you are not in.
Waste and hygiene are the owner's lines
Milk waste down 27% after the jug routine and prep list changed. Three daily cleaning routines maintained with no hygiene findings across two inspections. Both are boring and both are the reason a shop stays open and profitable.
Training eleven new baristas on the espresso standard and the till is the shift lead line. On a page for a supervisor's job it is the one that makes the case.
What the reading found
